At first, I have to say that if you want to eat really good kebapi, you have to visit Macedonia and eat them in a good traditional restaurant. If you can't do that, then, here is a recipe. Eating kebapi is a tradition in Macedonia. They go excellent with onions and Bukovska pepper.

Ingredients:
- 1 lb lean ground beef (little less than 500 gr)
- 1 lb lean ground lamb (little less than 500 gr)
- 3 large cloves garlic
- 4-5 sprigs parsley (2 tbsp finely chopped)
- 1 small yellow onion (1/2 cup finely chopped)
- 1/2 tsp baking soda
- 1/4 cup hot water
- salt and pepper for taste
Preparation:
- Mix the minced meat with your hands, gradually add spices. Allow the mixture to stand for several hours, then form kebapi.
- Bake kebapi on a charcoal grill for 5-7 minutes, if cooking on electric grill, bake 10 minutes. During baking, it's enough to turn them 2 times.
