- 2.5 cup white flour
- 1/2 cup whole wheat
- 1 cup warm water
- 20 g fresh yeast
- 1 tablespoon olive oil
- 1 tsp sugar
- pinch of salt
- 1 tsp vinegar
- 1/2 cup chopped olives
- 1/3 cup chopped walnuts
- 1 tablespoon chopped dried tomatoes
- 1 to 2 tablespoons olive oil for coating
Preparation:
- Put yeast, sugar, 50 ml of water and 1 tablespoon flour in a bowl, mix and allow yeast to grow for 10 minutes.
- Put flour, salt, activated yeast, the rest of the water, vinegar and olive oil in a deeper kneading bowl. Knead until a homogeneous and soft dough.
- Leave to rise for 1.5 hours in a covered bowl in a warm place.
- Roll out a crust from the dough, cover with olive oil and pour the chopped olives, nuts and dried tomatoes.
- Shape crust in a form of a roll and place in oiled pan, coated with baking paper.
- Allow bread to grow another 30 minutes. Cut bread before baking into transverse and coat with olive oil. Bake in preheated oven at 180 degrees for 30 to 35 minutes.
