Bean stew is a traditional Macedonian dish. It's usually prepared on Friday, I don't know why :) Some like it plain, some combine it with sausages, some with dried smoked ribs. I prefer beans plain in combination of fresh salad and some white cheese and olives. I have small earthenware dishes at home and I serve beans in them. Looks lovely right? :)

- 250 g beans
- 1 tsp red pepper
- 1 tbs flour
- 30 ml oil
- 1 onion
- dried mint, salt
- Pour water in a pot, add beans and let soak overnight. Strain the next day. If you want to prepare beans immediately and your beans didn't overnight, then, pour over beans boiling water, leave about 1 hour and continue preparation as follows.
- Pour 2 liters of water in the pot and bring to boil. Reduce temperature and leave to simmer for around 1 hour. Some beans need more time for preparing and some less, it depends on the beans. Try 1-2 beans to see if it's ready.
- In the end, prepare the roux. Finely chop onions and put to fry in oil. When soften, add red pepper and flour, mix well and pour roux in beans.
- Stir well and add dried mint and salt. Leave to cook for 10 more minutes.
