This is a salad that I invented myself. Since I always have too many eggs for Easter, I had to be creative and find a way to spend all those eggs somehow. This is perfect salad, it can also serve as a light lunch. I prepare it many times for my friends in the evening, they're all thrilled with this salad. It goes well with wine too.
Ingredients:
- 5-6 larger potatoes
- 4-5 boiled eggs
- white cheese
- 1/4 onion
- 1-2 tbs mayonnaise
- olive oil, apple vinegar, salt, black pepper
- Boil eggs and potatoes (I boil them together). Cool.
- Take a bigger bowl. Grate potatoes first. Add salt, some oil and vinegar.
- Then grate above onion.
- Grate eggs. Add thin layer of mayonnaise above.
- Finish with grated white cheese. Sprinkle black pepper.
