PRINCESS DONUTS (PROFITEROLES) IMPROVED RECIPE

This is another profiteroles recipe I've tried, I tried it for the first time like a week ago and I was thrilled how they turned out. I usually use another recipe, but I'm definitely switching to this one from now on.

























Ingredients:

For donuts:
  • 250 ml water
  • 125 g margarine or butter
  • 150 g flour
  • 1 sachet baking powder (10 g)
  • 2 teaspoons sugar
  • 4 eggs
  • powdered sugar for topping
For the filling:
  • 500 ml milk
  • 1 sachet vanilla pudding
  • 2 teaspoons vanilla extract
  • 3 eggs
  • 6 tablespoons sugar
  • 4 tablespoons starch (densifier)
  • 100 g butter
Preparation:

For donuts:
  1. Place the water, sugar and margarine together to boil. Mix the flour with the baking powder and add to the water. Allow the dough to cool. When cold, add the eggs one by one, mixing with a mixer.
  2. Make donuts with syringe for sweets or a bag with a hole. Arrange donuts on a baking pan covered with baking paper.
  3. Preheat oven to 250 C degrees and bake around 25-30 minutes until they get beautiful reddish color. Do not open the oven while donuts are baking!. Once ready, leave to cool.
For the filling:
  1. Beat eggs with sugar, add the vanilla extract, vanilla pudding, densifier and 200 ml milk. Boil the remaining 300 ml milk. When milk boils, add the mixture and cook as pudding. Cool the cream and mix it with butter.

Cut chilled donuts in half, apply filling in the middle using the syringe and sprinkle with powdered sugar. Add melted chocolate on top if desired.
