These cookies are called marshmallow cookies, all though they don't contain marshmallow :) Beautiful, mouth melting, no one can resist the soft spongy chocolate taste.

- 430 g flour
- 250 g margarine
- 2 larger eggs
- 2 tbs cocoa
- 1/2 tbs cinnamon
- 1 sachet baking powder (10 g)
- 1/2 tbs baking soda
For the foam:
- 120 ml of water
- 4 tbs honey
- 320 g of sugar
- 2 tbs gelatin
- 4 tbs cold water
- 4 egg whites
- vanilla extract
- 5 cooking chocolates
- 10 tbs oil
- For dough: Knead dough from the given ingredients and stretch crust 5 mm thick. Cut out circles with a smaller glass and align on a baking paper on a pan. Bake for 10 minutes at 180 C degrees.
- Put gelatin in 4 tbs of cold water and leave it for 40 minutes.
- Boil water, honey and sugar for exactly 5 min and add the gelatin. In another container whip the egg whites and when they are well-mixed, gradually add the sweet liquid while still warm and mix with a mixer for another 10 minutes. At the end, add couple of drops of vanilla extract.
- Apply the foam on baked biscuits and repeat the procedure once more with another layer of foam.
- Let them dry for about 1 hour.
- At the end, we apply the chocolate previously melted with the oil. Place one cookie at a time on tines of a fork, submerge in chocolate, then tap fork on edge of bowl to remove excess. Place on wire rack set over a baking sheet. Let cookies set in refrigerator, for about 10 minutes.
