Also known as American donuts, very popular in Macedonia. There is a guy with a special donuts machine that sells these small American donuts every day during summer. My kids are crazy for them. And I thought I could try and make them at home. And the project was more than successful. Amazing donuts, even better than those from the guy outside :) I could take over his business :))

- 150 ml milk (5 fl oz)
- 1,5 tbs sugar
- 1 tbs flour
- 20 g yeast (or a bag of dry yeast)
- 1 tsp rakija (brandy, optional)
- 1,5 tbs oil
- 1 yolk
- about 300 g flour (10,5 oz)
- pinch of salt
- 1 pack vanilla sugar (10 g)
Preparation:
- Put yeast with the lukewarm milk, sugar and a little flour. Wait to activate. I use a coffee pot which I warm up a little on the hot stove and it activates in no time.
- Then pour the yeast in a proper container and add the rest of the ingredients and slowly add the flour as much as needed until you get a fine soft non-sticky dough.
- Leave dough on a warm place do rise for about 1 hour.
- Then, stretch a crust with thickness about 1 cm and using a wider glass, cut out circles and with a small rakija glass make the smaller holes. I used a bottle cap to cut out the small circles. Knead again the remaining dough and again make donuts in desired shape.
- Align donuts on a kitchen towel and leave to rise again for about 30 minutes.
- Then fry in oil at middle temperature on both sides.
- When fried, align on a paper towel to absorb the excess oil.
- Combine with jam, cream, powdered sugar, different glazes and different tastes as desired.
