Leeks are an ideal vegetables for preparing different kinds of pies. Whether you knead or you use ready filo dough - the resulting pie would be excellent because of the seducing taste of the leeks. This pie is made with filo layers and I was amazed with its softness, taste and smell. It stays soft and tasty even the next day. You can add ricotta cheese in the leeks filling too.

- 500 g thin filo layers for pie
- 2-3 pieces of leeks
- 2 eggs
- 250 ml yogurt
- about 50 g semolina
- 100 ml oil + 2-3 spoons in addition
- salt
- black pepper to taste
- grated cheese and sesame seeds for coating (optional)
- First coating: Mix in the oil and the eggs in 250 ml of yogurt.
- Second coating: Wash, peel and slice leeks. Add salt, pepper and put to fry in a pan on some oil until leeks soften.
- Coat the baking pan with oil, put one layer, add oil, put the second layer, coat with the yogurt mixture, add third layer, coat with yogurt and put the fourth layer. Put the leeks mix over the fourth layer and sprinkle some semolina. Then again, put one layer, apply yogurt mixture, add second layer, again add yogurt, then on the third layer add leeks and semolina and so on until you finish all layers.
- Cut the pie to pieces, coat on top if there is a little yogurt mixture left, if not, sprinkle very little oil and let the pie stand for about 20 minutes.
- I added sesame seeds and grated cheese on top before baking.
- Heat the oven at 200 C degrees and bake until it gets a beautiful color as in pic, approximately for 30 minutes.
- Combine with yogurt.
