HOW TO PREPARE ROUX (ZAPRSHKA) - THE MACEDONIAN WAY

It is known that traditionally in Macedonia are mainly eaten so-called mangi (stews, soups), and they all end up with adding roux. Roux is what thickens and gives the final touch to mangas. Here's an instruction how to properly prepare roux and make your food better.

Ingredients:
  • 50 ml oil
  • 1 smaller onion
  • 1 flat tbs flour
  • 1/2 tbs red pepper
Preparation:
  1. Put 50 ml of oil in a smaller pan and add finely chopped onion. Fry at low temperature. 
  2. When it begins to become yellow, add the flour and the pepper. Stir constantly for about 1 minute. 
  3. Finally, add it to the pot where you make your stew/soup and stir it in nicely. Take several tablespoons from the soup, add them in the pan where you made the roux and pour it back in the pot. Cook your manga for several more minutes.
