10 RECIPES FOR THE BEST LEAN SALADS (part I)

We're in the middle of the lent period, and whether we need salads for us or for enriching the table for our lean namedays/slava, we'll  break the monotony from the past celebrations with these amazing salad recipes.


1. Colorful salad with rice and tuna


Ingredients: 
  • 900 g cooked rice, 
  • 400 g tuna, 
  • 200 g can of beans or cooked beans,
  • 2 red peppers cut into cubes,3 tomatoes cut into pieces,
  • finely chopped parsley,
  • spoon finely chopped olives,
  • 4 tablespoons lean mayonnaise,
  • 1 lemon juice,
  • 2 tablespoons of olive oil.
Preparation: drain the tuna and mix all the ingredients into a homogeneous mixture.


2. Tuna lean salad 
Ingredients:
  • 2 cans tuna in pieces,
  • 100 g marinated mushrooms,
  • 100 g unsalty baked peanuts,
  • 500 g lean pasta (small macaroni),
  • 400 g lean mayonnaise,
  • 5 - 6 pickles,
  • salt.
Preparation: cook the pasta and drain nicely and then put in a larger bowl. Drain tuna chop it as well as the pickles and mushrooms, add peanuts, salt to taste and mix in the mayonnaise until you get a homogeneous mixture.


3. Lean potato and corn salad

Ingredients:

  • 1 kg. potatoes,
  • 2 carrots,
  • 5 - 6 pickles,
  • 1 small can of corn or cooked in that ratio,
  • salt, black pepper,
  • 5-6 roasted peppers,
  • olives.
Preparation: Wash the potatoes and put them to boil, peel and mash to get homogeneous mixture. Season with salt and pepper. You can also add a little oil. Clean carrots and cut into small cubes, you can put it raw or cooked. Pickles are also cut into cubes. Corn should be well drained. Cover round and deep bowl with transparent foil, place half of potato puree
above that add carrots, pickles and corn. Cover with the rest of the mashed potatoes potatoes and turn them into a suitable dish. Decorate with roasted peppers and olives.


4. Lean "hot" salad
Ingredients:

  • 8 roasted peppers,
  • 1 roasted eggplant,
  • 3 tomatoes,
  • 3 cloves of garlic
  • parsley,
  • salt,
  • 2 tablespoons oil.
Preparation: Peel the peppers and the eggplant. Place the tomatoes for a few minutes in a boiling pot. Then peel the vegetables, finely chop or mash with fork along with cleaned garlic and parsley. Don't overdo it so it won't turn into porridge. Finally, season with salt, pepper and oil. If you eat hot, then add hot peppers.



5. Lean salad with potatoes and carrots

Ingredients:

  • 500 g potatoes,
  • 200 g mustard,
  • 4 (smaller) onions,
  • 1 - 2 carrots
Preparation: Wash, peel and boil potatoes, and then carrots. Drain potatoes from the water (which you need to keep), then peel. Mash or chop potatoes and carrots, add to the bowl where you added previously chopped onion. Add mustard and mix with a mixer or with a spoon. When everything is mixed weel, let it cool. It can serve be served as a spread but also as a salad.
