DELICIOUS MINI CAROB CAKES

These are my favorite mini cakes from my childhood. Carob mini cakes! In that time,  carob wasn't available in my town and since I have an aunt in Croatia, she was our supplier and she would bring several kilos when she came to visit us. Carob is very aromatic and gives special taste to sweets.
 
Ingredients:
 
Biscuit:
  • 4 eggs
  • 3 cups of sugar
  • 2 cups of oil
  • 1 cup milk
  • 100 g minced carob
  • 3 cups of flour
  • 1 pack baking powder (10 g)
*cup size is 150 ml
 
Filling:
  • 1,5 cup of milk
  • 150 g sugar
  • 50 g cooking chocolate
  • remaining biscuit
Preparation:
 
  1. For the biscuit:Mix eggs and sugar with a mixer. Add the rest of the ingredients and add sifted flour and baking powder in the end. Mix well and put the mixture to bake in a pan coated with baking paper number 30 at 180 C degrees for about 25 minutes. Check with a toothpick if it's ready. After baking, circular shapes are cut off with a glass cup and the circles are cut in the middle horizontally before applying the filling.
  2. To prepare the filling: boil milk and sugar, add the cooking chocolate until it melts and then add the crushed remaining biscuit. Mix well.
  3. Apply the filling and if there is a remaining filling, apply it on the top too. 
  4. Decorate with whipped cream, coconut flakes or as desired. I dipped half of them in a chocolate glaze for an even richer taste.
