Usually when we make kifli, the recipe requires 1 whole butter or margarine (250 g). This recipe contains only 90 ml of oil and still kifli are very soft, spongy and tasty. I guarantee you'll love them. The dough is easy to handle. I usually prepare it in the morning and form kifli after couple of hours.
Ingredients:
- 1 fresh yeast (40 g)
- 150 ml of yogurt
- 150 ml of milk
- 90 ml oil
- 1 tsp salt
- 1.5 tsp sugar
- 1 egg
- about 600-700 g flour
- pinch of baking powder
- 1 egg and a little sesame seeds for coating
- filling is optional, I put ricotta cheese
Preparation:
- In the warm milk we dissolve yeast and sugar. No need to activate it.
- Then we add the baking powder, salt, egg, yogurt and oil.
- With a spoon we combine all the ingredients.
- We start to gradually add flour and knead by hand until we get smooth and non-stick dough.
- Cover the dough and let it rest for 1 hour
- Then we split it into two parts.
- From each section we make a circular crust. Cut the circle in triangles as in picture and put the filling on the wider part and roll.
- Align kifli on a pan coated with baking sheet, coat with an egg and sprinkle sesame seeds.
- We leave them on a warm place to rise for 30 minutes.
- We bake in a heated oven at 180-200 for about 20-25 minutes. After baking, I coated each with a bit of melted butter.
- We serve hot.
