My mom always prepared this stew while I grew in her home. She learned the recipe when she worked in a kitchen for a while. I found the name "ragu" interesting, though I don't know what it means. It's a beautiful reach stew and quite healthy.

- 500 g veal
- olive oil
- 1 head onion
- 3 carrots
- 2 potatoes
- 1 celery root
- 2 liters water
- salt, black pepper, vegeta, fresh basil or parsley
- Cut meat in small cubes and fry on some olive oil. Add finelly chopped onion and grind carrots and fry them together.
- Then add potatoes and celery cut in cubes and fry shortly.
- Add water and boil all together at low heat until meat and vegetables soften. Add more water if necessary.
- In the end, add salt, spices and leave to cook for 10 more minutes.
- Decorate with fresh basil or parsley.
