I love spinach in every form. I usually prepare this dish in a pot, this time I tried it in a pan. Both ways are great, but the pan looks amazing when you remove it from the oven, right?
The eggs I used are from the village, same is the spinach - all natural.

Ingredients:
- 500 g spinach- cleaned, chopped and softened in a hot water
- 1 onion
- 2 handful of rice
- 1 carrot
- 1/2 tbs vegeta
- oil
- 1/2 tbs paprika
- 3-4 eggs
- Fry onions with some oil in a pan, add spinach and fry until the spinach is soften.
- Add previously finely chopped carrot.
- Add the mushrooms.
- Finally, add rice and continue to fry until rice becomes translucent.
- Pour hot water to cover the spinach, add spices and salt, mix and place the pan in the oven.
- Bake for about 30 minutes at 200C.
- Before the end, add the eggs on top and return the pan in the oven to bake for 5 minutes.
- Serve hot with sour cream or fermented milk.
