Mini version of the classic fruity pizza, which everyone loves! Soft butter / sugar cookies with cream cheese and fruit topping! Wonderful and very decorative. It was my first time preparing these cookies and I was delighted of the result. The biscuits are tasty even without the topping.
Ingredients:
Biscuit:
- 1 and 3/4 cups of flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon of baking soda
- 1/4 teaspoon salt
- 50 g of butter softened to room temperature
- 60 g of pork fat (lard)
- 3/4 cup sugar
- 2 tablespoons cream cheese
- 1 vanilla sugar (10 g)
- a little grated lemon peel
- 1 bigger egg
- 10 tablespoons cream cheese
- 1-2 teaspoons of milk
- 1/2 teaspoon vanilla extract or vanilla sugar
- 1 cup of powdered sugar
Preparation:
- First, whisk the butter together with pork fat, sugar and cream cheese. Mix nicely using a mixer until you get a bright and soft mixture.
- Add egg, vanilla and grated lemon peel and continue to mix.
- Then add the flour with the baking powder, the soda and the salt, and briefly beat at a low speed to connect.
- Then, with wit hands, make balls (the mixture would be sticky and slightly cumbersome to work) and place them on a baking pan aligned with a baking sheet and press them to get the shape of a disc. Leave space between cookies as they grow during baking.
- Preheat the oven to 180 C degrees. Put the cookies to bake for about 10 minutes until the edges are slightly golden.
- Prepare the cream, mix cream cheese, milk, vanilla and powdered sugar until a beautiful creamy structure is obtained.
- When the cookies are ready, allow them to cool for 5 minutes and then carefully remove them.
- Apply a spoonful of cream and smoothly even the cream.
- On top, arrange finely chopped fruit as desired, I put a banana, strawberry and blueberry.
- Eat immediately.
