Pide is something that mostly reminds us of our pastrmalija, but it totally tastes differently. I first tried pide in Turkey, reminded me of pizza with minced meat. I fell in love with the taste and I promised myself I need to try a home version of this specialty. From these ingredients, I made 2 pide(s), one with mince and one with spinach and ricotta. I don't know which one was better, both were amazing!

- 500 g flour (350 white and 150 wholewheat)
- 10 g of dry yeast
- 1 egg
- 2 tablespoons sour cream
- 3 tablespoons sunflower oil
- 100 ml of milk
- 1 full teaspoon of salt
- a little warm water about 50-60 ml
- 2 full hands spinach
- 5-6 teaspoons of salty ricotta (urda)
- 1 tablespoon oil
- 1 egg
- grated cheese
Filling 2:
- about 200 grams of minced meat fried with onions, tomato sauce and spices
- grated cheese if wanted
- 1 egg yolk
- Mix all the ingredients for the dough with the help of a mixer. The dough will be a little dry, add a little warm water and knead soft dough with your hand.
- Cover it and leave it for about half an hour to rise.
- Then re-knead the dough and divide it into 2 parts.
- From both parts spread shapes as in pictures, the ends are thicker, and the middle thinner.
- Place the filling and coat the ends with the yolk.
- Put them to bake at 200 C degrees for about 20 minutes.
