Fast, light, creamy and tasty cake made literally in 15 minutes. I saw the idea of this cake on one of Macedonian cooking groups on fb, it was named as the Eclair cake and I immediately made it after work. It didn't give me any hard work, no mess in the kitchen, no losing hours for preparation, no baking-just what you need on a warm summer day.
Ingredients:
- about 30 biscuits
- 1 kg of vanilla pudding (according to the instructions)
- 200 g whipped cream (according to the instructions on the bag)
- 50 g melted butter
- 3 tablespoons of cocoa
- 200 g of powdered sugar
- 6 tablespoons of milk
- a slice of salt
- First boil 3 puddings with one liter of milk and sugar according to the instructions on the bags. Move aside to cool covered with nylon foil to avoid formation of crust.
- After the pudding is cooled, take 1 bag of whipped cream and mix it with milk (according to the instructions) and add it to the cooled pudding and mix nicely.
- If there is available ready whipped cream in your country, then use that one.
- One row of biscuits is arranged (I dipped each in milk), half of cream is applied, another row of biscuits is arranged and the rest of the cream is applied. The third row of biscuits is arranged.
- The glaze is made by mixing the melted butter, milk, powdered sugar, cocoa and adding pinch of salt. Do not boil the glaze, just mix and apply above the third row of biscuits.
- Put the cake in the refrigerator to firm and cool down.
