When your husband brings you at home 10 kg of peaches, you must think how to use them since you can eat them all. So far I have made 2 tours of juice and a couple of times I used peaches in our morning smoothie. And I decided to use the last ones for a nice summer fruit cake. The cake is delicious, I added whipped cream above and put it in the fridge to cool well. You can combine it with a ball of ice cream.
Ingredients:
* 1 kg of peaches or other seasonal fruit
* 2 eggs
* 1 cup sugar
* 1 cup yogurt
* 2 cups of flour
* 1 tsp baking powder
* 100 ml oil
* 1 sachet of vanilla sugar
* Sugar powder or whipped cream for topping

- Mix the sugar and eggs with a mixer, then add yogurt, oil and finally flour mixed with baking powder. Mix well and pour the mixture into a circular pan no.26 coated with baking paper or oiled and floured.
- Bake for 7-8 minutes at 175 C degrees, then remove the pan and arrange slices of peaches or other fruit above.
- Add vanilla sugar and return the pan to bake another 40-50 minutes until the fruit is baked, check with a toothpick if the biscuit is baked.
- Remove the pan and allow the cake to cool and then transfer it to a suitable serving plate.
- Sprinkle powdered sugar or whipped cream, decorate as desired.
