ROAST EGGPLANT WITH GARLIC AND COOKING CREAM

I love baked vegetables and I always prepare them depending on what I have in the fridge at the moment. What I like in this recipe is that the eggplant isn't fried. I found that fried eggplant or zucchini makes heaviness in my stomach so I try to switch from frying to baking when I can. Preparation is easy and the given ingredients are for 1 person.


 Ingredients:
  • 1 eggplant
  • salt, olive oil
  • chopped garlic as desired
  • 150 ml cooking cream
Preparation:
  1. First wash the eggplant and cut it into circles. Arrange circles on baking paper on the grill bars in the oven. Put them to bake at maximum heat until they soften.
  2. After they soften, transfer half into ovenproof dish, add a little salt, olive oil and chopped garlic, then arrange the rest of eggplant and also add salt, sprinkle olive oil and garlic.
  3. Then add the cooking cream and return them into the oven to bake until they get beautiful roasted color.
  4. Decorate with fresh parsley.
