MACEDONIAN OMELETTE

I usually make omelette when I have eggs from the village. These eggs are not always available, for example when it's too cold in winter and when it's too warm in summer, chickens can't deliver eggs. And I want it rich, I put peppers, onions, olives, tomatoes, depending on what I have in my fridge.The recipe can be adjusted and you can add or subtract something according to taste.

Ingredients:
  • 5-6 eggs
  • 2 peppers
  • 1/3rd chopped onions
  • 100 g ricotta (urda)
  • a little chopped smoked meat
  • around 10 chopped olives
  • salt and spices
Preparation:
  1.     First peppers and onions are chopped and fried on olive oil.
  2.     In a bowl, mix eggs with meat, ricotta and olives and add this mixture to the peppers and onions. Cover the pan with a lid or aluminium foil and let the eggs bake on both sides. If you can, flip omelette to the other side.
  3.   Combine with fresh tomatoes and sprinkle Bukovska pepper on top.
