A wonderful and light lunch that will thrill you with the taste. A great way to consume potatoes while avoiding the usual way of preparing them. Potato prepared this way literally melts in your mouth. Add salad to the dish and enjoy your lunch. The given quantities serve 2 people.
Ingredients:
- 5 medium sized potatoes
- 150-200 g of grated cheese
- 4 large spoons of sour cream
- 1 small finely chopped onion
- a few chopped olives
- optional spices (vegeta, black pepper, paprika, curry)
- Boil the potatoes first, but not completely, they should remain slightly unboiled.
- Allow them to cool well and peel.
- Grate on the large side of the grater or cut into very thin strips. Season with salt, curry, a little red pepper and black pepper.
- Add the grated cheese, chopped onions, olives and sour cream and mix well and carefully, we do not want to get a mashed structure, but the potatoes need to keep their shape.
- This quantity is enough for two, so I roasted in 2 small earthenware dishes, like the ones we use for cheese in the oven, and you roast in what you have available.
- Coat the baking tray with olive oil and transfer the entire mixture inside and distribute well without too much pressure.
- Bake for about half an hour at 180 C degrees, before end, add just a littlegrated cheese and sour cream on top and bake for another 2-3 minutes until the cheese is melted.
- After baking leave to cool for a few minutes then serve.
