Gjuvech is a beautiful Macedonian pan made of mixed vegetables. I put what I had at home and you can add zucchini, eggplant, okra ...Many times it is prepared with meat, but this time I prepared it lean because I knew that many of you are in their lent period and need a recipe like this.
Preparing of gjuvech is very easy, I made the preparation in several minutes. The given quantities are enough for 2 adults and 2 children.
Ingredients:

- 2 potatoes
 - 2 peppers
 - 2 tomatoes
 - 2-3 carrots
 - 300 g green beans
 - 300 g peas
 - 1 small onion
 - 2 cloves of garlic
 - parsley
 - 1 tbsp
 - 1 soup cube
 - 1 tablespoon red pepper
 - a little black pepper
 - 150 ml tomato sauce
 - water enough to cover the vegetables
 - 2-3 tablespoons olive oil
 
- Chop all the vegetables and place in a larger pan, add the spices, parsley, tomato sauce, oil and pour water (in which you've previously dissolved the soup cube) to cover the vegetables.
 - Cover the pan with a lid or foil and bake in the oven for about 1 hour at maximum heat, then remove the lid and allow to bake for a little more just to get a very thin crust on the top.
