This is my favorite combination of spice mixes that I regularly store in a small jar and use in almost all cakes and pastries. Usually half a teaspoon in the dough or in the filling is enough, don't put too much because we don't want their aroma to predominate. To prepare honey cookies, dry cookies, baklava and similar treats where cinnamon is added, you can add more of this spice.
Ingredients:
- 1 teaspoon of ginger powder
- 1 teaspoon of grated nutmeg
- 1 teaspoon minced cloves
- 1 teaspoon cinnamon
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cardamom
- 1 teaspoon of anise seeds (optional)
1. Mix all the spices and leave them in a jar that closes nicely. It is desirable to leave such prepared spice mix for at least a day or two before use.
2. Although each of the ingredients has its own strong aroma, these blends give a wonderful blend of fragrances in which none of them rejuvenate and when added to the cakes and cookies, gives a special taste. When adding the spices, make sure that the anise seeds remain in the jar.
