This is a recipe for the most delicious mini pancakes. I got the idea from street vendors in Bitola who sell mini pancakes with all kinds of toppings on top, so it was a challenge for me to try making them at home. My son told me that mine are 100 times better than the ones sold outside, and the kids aren't lying right? :)
About 100 mini pancakes are sure to come out of this dose, but you are free to halve the amount. Cup size is 200 ml.

Ingredients:
- 2 eggs
- 80 g melted butter or margarine
- 2 and a half cups of lukewarm milk
- 3 cups flour
- 1.5 sachets of baking powder
- a pinch of salt
- 2 sachets of vanilla sugar (if you make them sweet) if not, a pinch of sugar
- oil for coating the pan
- Whisk the eggs with a wire, add the melted butter and then the milk, add the sugar, salt and gradually add the flour with the previously added baking powder. Mix well so that there are no lumps. The mixture does not need to stand.
- Heat the pancake pan, and coat it nicely with oil before every round.
- Pour a little dough several times, depending on the pan size. I always use 2 pans at the same time.
- Bake at medium temperature, and when bubbles form from above, flip them over.
- Serve the pancakes with your favorite cream or syrup. The good thing is that even the next day they are beautiful and don't dry out.
