GELATO STRAWBERRY ICE CREAM

This ice cream is the best homemade ice cream I've ever tried and even made. It is better than many ice creams sold under the name strawberry ice cream. I am delighted with the taste and texture, and it is made in a very short time. Тhe original recipe is Italian, and they use a high-fat milk, the higher the fat, the better the result.

Ingredients:
  •         1/2 cup sugar
  •         1 tablespoon cornstarch
  •         1 cup whole milk
  •         3/4 cup heavy whipping cream
  •         2,5 cups strawberries
  •         1 tbs lemon juice
  •        3-4 tbs honey
Preparation:
  1.  Stir sugar and cornstarch in heavy medium saucepan. Whisk in milk and cream. Whisk over medium heat until gelato base thickens and begins to bubble, about 5 minutes. Put to cool in cold water stirring occasionally.
  2. Puree strawberries with the lemon juice and honey in a processor. Pour gelato base in a proper container and pour the strawberry puree in stripes as in picture. 
  3. Put to freeze for several hours.
