A simple, delicious, juicy and light cake that is made very quickly and is eaten even faster. I got the cherries from my father-in-law, who has a fruit garden in Bukovo, all the fruits from there are non sprayed and environmentally friendly.
Ingredients:
- 2 packs of ladyfingers (about 30 pcs)
- 600 g of sour cream with 20% fat
- 200 g of powdered sugar
- 600 g of cherries (frozen or compote, well drained)
- 1 sachet instant whipped cream in powder prepared according the instructions or whatever you regularly use
- 3 tbs sugar
- 1 sachet gelatin in powder dissolved in 2-3 tbs water
- Mix well sour cream and sugar with a spoon.
- Use a small cake mold, about 24 cm. I used a heart shaped mold though it's the best to use rectangular form.
- Then arrange one row of ladyfingers (3x5), 1/3rd of the sour cream, add the cherries and add the second third of the sour cream.
- Again put a row of ladyfingers, add the rest of the sour cream and add half the whipped cream above.
- Then boil the remaining cherries with 3 tablespoons of sugar and just a little water, cook for 20 minutes and finally add gelatin previously dissolved in 2-3 tablespoons of water.
- Stir and allow to cool slightly, then apply on top. Garnish with the remaining whipped cream and add some fresh cherries.
- Allow the cake to cool nicely and after a few hours it is ready for consumption.
