I got the recipe for this cake from my mother, I first tried it at her place and I was thrilled how light and juicy this cake is. I'm not very fond on banana desserts since bananas spoil very fast, but since this dessert won't last more than 2 days, that's no problem at all :) You can also use other fruits instead of bananas, I would go with strawberries next time.
Ingredients:
- 2 eggs
- 50 g sugar
- 1 sachet of vanilla sugar (10 g)
- 4 tablespoons oil
- 120 ml of milk
- 1 tablespoon cocoa powder
- 100 g of flour
- 1 sachet of baking powder (10-12 g)
- 2 not very ripe bananas
- 1 sachet of chocolate pudding in powder (40 g)
- 400 ml of milk
- 3 tablespoons sugar
- 50 g of chocolate
Preparation:
- First, using a mixer beat the eggs with the sugar and vanilla sugar for about 5 minutes. Add the oil and milk and mix well.
- Sift and mix the flour together with the cocoa and the baking powder and add it to the eggs. Mix well with a wooden spoon.
- Coat the baking pan with butter. (eg.tart mold)
- Bake the cake in a preheated oven at 180 C degrees for about 15 minutes.
- In the meantime, boil the pudding in the standard way with milk and sugar. When it is cooked, add chocolate and mix until chocolate melts.
- Flip the baked cake and arrange pieces of bananas on the cake. Pour over the warm pudding and decorate with crushed nuts or walnuts.
- Leave to cool completely, then serve.
