I love zucchinis, in every form, so I'm always open for trying out new recipes which include zucchini. A friend of mine sent me the recipe since she knows how much I love zucchini and I tried it out the next day. It's beautiful, easy to prepare and sooo tasty.
Ingredients:
- 3 eggs
- 200 g of ricotta cheese (7 oz)
- 80 g flour (2,8 oz)
- 120 g feta cheese (4,2 oz)
- a little salt (if needed) and black pepper
- 1/2 teaspoon baking soda
- 2 tablespoons olive oil
- 1 chopped clove garlic (or more if desired)
- 600 g of zucchini (1 large or 2 smaller zucchini) (21 oz)
- a few leaves of fresh basil or parsley
- First the zucchini are washed well and cut into the thinnest strips with a thickness of 1 mm, you can use the tool for peeling potatoes. Add a little salt and leave them for 1 hour to release the liquid. Squeeze them hard and pour out the excess liquid.
- Then whisk the eggs in a deeper bowl, add the cheese, continue mixing and add the spices, garlic, oil, baking soda, basil or parsley and flour, mix well then add the zucchini, mix again and pour the mixture in a small greased pan 20 x 20 cm.
- Flatten on top and bake at 200 C degrees (392 F) for about 40 minutes.
- After baking, leave to cool nicely, then cut and consume.
