HURMA COOKIES ON A COMB

These cookies come under the category of syrup-drenched cookies. The original name of the cookies is "kalburabasti", a very famous Turkish treat. This Ottoman Turkish treat has a very similar variation of it ("Hurmašice" or "Hurme") which can be found in all parts of former Yugoslavia, including Macedonia.

Ingredients:

For the dough:

  • 100 g butter
  • 1 egg
  • 1/2 tablespoon sugar
  • 1.5 tablespoons sour cream
  • 2 tablespoons semolina
  • 1/2 tsp baking powder
  • about 180 g flour (as needed)
  • hazelnuts, almonds or walnuts as needed

Syrup:

  • 250 g sugar
  • 350 ml of water
  • 1 sachet vanilla sugar (12 g)
Preparation:
  1. First prepare the syrup: put the water, sugar and vanilla sugar in a saucepan and boil for about 10 minutes. Allow to cool.
  2. Whisk the butter that was at room temperature, add sugar, egg, sour cream, whisk well and finally add semolina, baking powder and flour as needed. The dough must be fine, soft and smooth.
  3. Take from the dough about 20 grams each, first form a ball with your palms and then form a "roller" from each ball. Press the roller into the comb (unused comb of course).
  4. Shape them as in the photo procedure, then arrange on a baking tray (coated with a little oil). Put one hazelnut or almond in the middle.

  5. Bake at 200 C for about 20 minutes.
  6. After baking, pour the lukewarm syrup over them. Allow them to absorb the syrup and cool, then they are ready to serve.
  7. From this measure, came out 16 pieces, 20 g each weight.
