These buns were a real challenge for me to make. The challenge was very successful, and I was very satisfied. I mostly liked the trick to get the balloon shape. It will be explained in the recipe. The dose is for 4 buns.
Ingredients:
- 1/4 cube fresh yeast (10 grams or 0,3 oz or 1 tsp dry yeast)
- 100 ml of warm water (3.4 fluid oz)
- 2 tablespoons sour cream
- 2-3 tablespoons olive oil
- half a teaspoon of salt
- a pinch of sugar (for the yeast)
- about 300 g of flour (10,5 oz)
- 1 egg yolk and sesame seeds for coating
- 250 g minced meat (8.8 oz)
- 1 small chopped onion
- half a spoon of vegetable seasoning
- black pepper to taste
Preparation:
- First, dissolve the yeast in warm water and add a little sugar.
- Then add sour cream, salt and gradually add flour. Knead a soft, slightly sticky dough and finally add 2-3 tablespoons of oil and knead the dough. It should stop be sticky and if it still is, add a tablespoon or two of flour.
- Form a ball and immediately divide it into 8 parts and form a small ball from each part.
- Cover them with nylon foil and leave to rise for at least 1 hour.
- Meanwhile, prepare the minced meat. Fry the chopped onion, add the minced meat, simmer for about 10 minutes and finally add the vegetable seasoning and black pepper.
- Then, roll out all 8 balls with the help of a rolling pin in the size of a small round plate.
- From the 8 parts you will get 4 buns, so you use 2 crusts for 1 bun.
- You can immediately arrange 4 spread crusts on a greased baking tray.
- Then add the filling leaving 2 cm free at the ends.
- Cover each from the top with the remaining 4 crusts.
- Join the ends spirally as you do when making zelnik, press well so that there is no air flow and leave only a small part of about 1 cm unattached. In that part between the two crusts, insert a thicker straw and blow inside until it inflates like a balloon.
- Take out the straw and immediately glue the place by pressing it with your finger. If your balloon is punctured, gently repair the hole with a little dough. One of my 4 buns was punctured and didn't inflate and came out like a small pie.
- Then, coat them very gently with beaten egg yolk, add sesame seeds on top.
- Bake at 200 C degrees until nicely browned.
