This pie / pizza is different from the others you bake at home because it looks like it was baked in an pizzeria oven. We often wonder why the dough in the pizzeria is different from the one we make at home. The answer is - in baking. The pizzas from pizzerias are baked and placed directly on a heated plate, and at home we put them in a cold tray and bake them.
For this pizza / pie I experimented and heated a baking tray in the oven. I prepared the pie on the side and then transferred it to the heated tray and baked it immediately. That's why the dough was so wonderful, magical! Ready pizza sets are on sale in combination with a baking plate stone and a pizza shovel. I don't have one and my regular baking tray did a great job. The recipe is for 4 pies / pizzas.
Ingredients (4 people)
Dough:
- 100 ml warm water
- 100 ml of yogurt (buttermilk) (3,5 fluid oz)
- 100 ml of oil
- 20 g of fresh yeast (0,7 oz or 1 sachet dry yeast)
- 1 teaspoon sugar
- 1 teaspoon salt
- 500 g of soft flour (17,6 oz) and more flour if needed
- 300 g minced meat (10,5 oz)
- 1 head of red onion
- 1 tomato or tomato puree
- to taste, pepper
- a little oil
Preparation:
- Put the sugar in warm water, add the yeast and wait for it to dissolve.
- Add oil, yogurt, salt and slowly add the flour. Knead soft non-stick dough. Add more flour if needed.
- Let the dough rise for at least 2 hours.
- Meanwhile, prepare the filling.
- Fry the onion, add the minced meat and simmer for about ten minutes.
- Peel the tomato, cut in cubes and add to the meat. Add salt and black pepper. If you don't have tomato, add tomato puree, and that's fine too.
- After 2 hours, turn the oven to 250 C degrees (maximum heat) and start the preparation. Put the baking pizza plate or baking tray in the oven.
- Divide the dough into 4 balls, work on a floured surface, the dough should be easily separated from the work surface, stretch each ball as a pizza with the ends higher.
- Add the meat filling.
- Carefully transfer the dough to the hot plate or baking tray, you will need a kitchen spatula to lift the dough and transfer it. Bake for about 10 minutes until the ends start to get color. Be careful not to burn your pizza, especially if it's your first time baking it this way.
- If you wish, you can put an egg on top, add fresh tomatoes and peppers after baking, it is delicious.
