DIP FROM DRIED PEPPERS, LEEKS AND GARLIC

I've previously posted a similar recipe with hot peppers so the dip was very very hot. This is a sweet variation, plus I added leeks and I changed something in the procedure. Both dips are awesome and very healthy, go excellent with sausages or kebapi and of course, you will need a good fresh bread for dipping.
For the preparation you'll need sweet dried red peppers.
  Ingredients:
  • 4 larger dried red peppers
  • 3-4 cloves chopped garlic
  • 1 thin piece of chopped leek
  • a small cup of boiling water
  • 3 tbs olive oil
  • 3 tbs vinegar
  • and salt to taste
Preparation:
  1. First slightly roast peppers on a hotplate or grill, then chop as thin as possible together with the seeds.
  2. Add the chopped garlic and leek.
  3. Add the boiling water and leave to cool.
  4. Add salt, oil and vinegar.
  5. If desired, parsley can be added.
