EASY BISCUIT APPLE PUDDING CAKE (no baking)

 If you want a light dessert that will melt in your mouth, then, this is it. I first tried similar dessert at my mother in law's house and that was a love at first sight. She always prepares it with black plums. I've tried it with peaches too and this time I experimented with apples. Instead of the regular biscuit that I needed to bake, I used tea biscuits which I put in 2 rows. Still delicious! For those who don't want to use biscuits, bake your favorite sponge cake biscuit and apply filling on top. Remember that I always encourage you to experiment!


Ingredients:

For biscuit:
  • 2 rows of 5x5 tea rectangular biscuits (50 biscuits)
  • about 8 tbs of milk for sprinkling the biscuits
For filling:
  •     1 kg apples, peeled and chopped in quarters or smaller
  •     1 l water (if fruit is frozen, then less water)
  •     8 tbs sugar
  •     2 bags vanilla instant pudding in powder (2x40 grams or 2.8 oz)
For topping:
  •     whipped cream
Preparation:
  1. Put fruit with water and sugar to boil until fruit has soften (about 20 minutes). Fruit should be cut in half, quarters or even smaller.
  2. Take 1 cup from the water where the fruit was cooked. Leave to cool. Than, dissolve pudding powder in the water, mix well and add this pudding mixture to the boiling fruit and mix until it thickens. It will thicken in 1 minute.
  3. Arrange 5x5 biscuits in a suitable tray or dish, sprinkle a little milk and add half of the fruit filling. Arrange another 5x5 row, sprinkle milk, and add the rest of the filling. Spread it evenly and leave to completely cool.
  4. After cooling, add about 500 ml (2 cups) of whipped cream.
  5. It's the best to serve the next day, cold from the fridge.
