When I have village eggs, this salad is my favorite to prepare. And when spring onions come out on the market, the pleasure is even higher. It can be combined with old onion, but the eggs are tastier with spring onions.
I've said many times before that having village eggs is a real fortune to me. The taste and the quality is incomparable with the commercial eggs. It's hard to find them, but I have my guy who supplies me for several years.
Ingredients:
- 3 hard-boiled eggs
- 2 pieces of spring onions
- olive oil and apple cider vinegar
- salt and black pepper
The preparation is simple.
Boil eggs, then cool them in cold water so they'll peel easily.
Chop the eggs and arrange in a plate. Add chopped onions, then add vinegar, oil, salt and black pepper. Cheers.
