A healthy and delicious breakfast that I made just to use the two overripe bananas I had forgotten in the fridge. Both the eggs and the milk I used were from the village. I didn't use recipe, I just put the ingredients in the blender and give it a try. Just to mention that you really need to use non-stick frying pan since the structure is different from the regular batter for pancakes and it's more sticky, probably because of the banana. My suggestion is to make mini pancakes instead of several big ones. From this amount you get 2 servings.
Ingredients:
- 1 egg
- 1 overripe banana
- 1 cup oatmeal
- about half a cup of milk (or vegetable milk)
- for topping: a little honey, crushed walnuts and blueberries
Preparation:
- Put all the ingredients in a blender and mix briefly. You will get a batter as for pancakes. If necessary, add more liquid.
- Pour the mixture on a greased pan to bake 6-7 mini pancakes at the same time and bake normally like you bake the other pancakes.
- Combine topping as desired, I made mine with just a little honey (because they are sweet from bananas), walnuts and blueberries.
