When you are still in isolation and haven't cooked for several weeks and suddenly you get the strength and appetite to prepare something, then this is the RESULT. I was craving for giro from yesterday so I started at 12 pm o'clock, and at 2 pm we already had lunch. I'm a multitasker in kitchen and I often use 2-3 hotplates at the same time. The buns, meat, potatoes and dressing - I made them all by myself. The amount is enough for 6 giros and these giros will make you lick your fingers, just, delicious. I won't talk, I will move to the recipe because I have a lot to write. Here we go:
Meat preparation
First prepare the meat. You need about 500 g of pork neck cut into 5-6 pieces about 1 finger thick. Dip all the pieces in mustard and barbecue sauce and then season with vegetable seasoning. Let them marinate for a few hours, and if you do not have time, for at least half an hour. Then put them in a baking tray, add half a cup of water and a little oil on top, cover the tray with foil and put it at the maximum temperature to bake in the oven for about 40 minutes, then reduce the temperature to 200 C (390 F) degrees, flip them over and let them bake again 40 minutes. While the meat is roasting, prepare the dough for the bread.
Bread preparation
- 2 and a half cups of flour (cup size 250 ml)
- 180 ml of milk (2.7 liquid oz)
- half a cube of yeast, 20 g (or 1 packet dry)
- 3 tablespoons oil
- 1 tsp of salt and 1 tsp sugar
Knead the dough and let it rest for 30 minutes. Then divide it into 6 balls, roll out a round crust from each ball.
Bake in a non-greased pan at medium temperature as you bake pancakes.
Bake them out and arrange on top of each other covered with foil to soften them further. After baking you can coat them with a little butter, I did not coat them because the butter has a very dominant aroma.
Potatoes
For the potatoes, you can also use frozen potatoes, I used fresh potatoes, 4 potatoes were enough for me, peeled, chopped and I fried them. I fried the potatoes at the same time as I was baking the flat bread, and the meat was roasting in the oven.
For the tzatziki sauce
- 200 g sour cream
- 2 grated cucumbers
- juice of 1/2 lemon
- 3 tablespoons olive oil
- salt, garlic powder, black pepper and dill
Addition
Sliced tomatoes, cucumbers and onions.
Arranging the giro
When you are done, take a a piece of bread, coat it with tzatziki, add the vegetables, chopped meat into small pieces and potatoes, wrap it and fasten it with a toothpick.
