Turlitava is an old, traditional Macedonian dish that is prepared with a little more patience and love.
The best thing is when it's made in an earthenware pot, and I received this one as a gift 1 week ago and I immediately decided to use it to make this turlitava. The preparation was a real pleasure for me and it is not complicated at all. You need to have different vegetables and a piece of meat. Sure you can prepare it without meat too. I had 1 piece of meat prepared the previous day, so I just cut it into pieces and added it to the pan.
Ingredients:
- 1 zucchini
- 1 eggplant
- 2 potatoes
- 2 onions
- 5-6 cloves of garlic
- 3-4 carrots
- 1 large tomato
- 1 red pepper
- 1 green pepper
- 10 pieces of okra (added 10 minutes before the end)
- 200 ml tomato sauce
- 200 ml of water
- 1 large piece of pork (about 500 g)
- spices: 1 tablespoon vegetable seasoning (vegeta), 1 tablespoon red pepper, black pepper, bay leaf and dried parsley
- a little oil
Preparation:
- First, cut the meat into pieces and fry it until it gets a little golden colour.
- Wash all the vegetables, clean and cut into pieces and put them in a greased fireproof dish.
- Add the pieces of meat.
- Pour the tomato sauce and water, add spices, stir.
- Sprinkle a little oil on top, cover the pot with a lid.
- Put to bake in a preheated oven at 200 C degrees (390 F) for the first 1 hour and another 1 hour at 170 C degrees (330 F).
- Just before the end, take out the pot and add the okra and leave it to bake for another 10 minutes.
- After baking, leave the pot to cool for 15 minutes and then serve. Cheers!
