Avocado is one of my favorite fruits (yup, it's a fruit, not a veggie) and besides fresh, I often bake it briefly with other toppings and it is great. Even if I have left some, I eat it the next day, cold. Here I added eggs, tomatoes, onions, some cheese and smoked meat. The quantity is for 2-3 people. If you want a healthy protein breakfast, then, this is the right recipe for you.
I like avocado so much that I always keep one as a plant in my home. It grows about 1 meter, stays like that for several months and dies. But I'm persistent and plant another one, and another one and I do that for several years.
For the recipe you will need:
- 3 ripe avocados
- 3 eggs
- 1 diced tomato
- 1/4 onion chopped into cubes
- 50 g of grated cheese
- 50 g smoked meat cut into cubes
- a little salt, oregano
- 3 slices of wholewheat bread
Preparation:
- Beat the eggs and add the chopped tomatoes, onions, cheese and meat, add spices and stir.
- Cut the avocados in half and remove the seeds. Arrange them on a baking tray lined with parchment paper. Put the slices of bread in the same tray.
- Fill the holes of the avocado with the filling, being careful not to run down the sides. Place the same filling over the pieces of bread and spread it nicely.
- Place the tray to bake in a preheated oven at maximum temperature for about 10 minutes.
- Use a teaspoon for eating.
