Enrich your Christmas table with the softest, juiciest muffins that melt in your mouth. At first glance, the recipe doesn't look special, but when you try them, you will understand why these are some of the best muffins you have ever tried. The muffins are soft, crumbly, aromatic, just melt in your mouth. The vanilla and blackberry combination is perfect. If you don't have blackberries, you can use cherries or other red fruit.
Cup size is 200 ml. You'll get around 16 muffins.
Ingredients:
- 2 eggs
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup oil
- 1/2 cup plain yogurt
- 2 teaspoons baking powder
- 1 1/2 cups flour
- 1 cup of blackberries (as needed)
- powdered sugar for sprinkling
Preparation:
- First, beat the eggs with the sugar for about 10 minutes.
- Then gradually add the oil and continue to mix.
- Add the yogurt, vanilla extract, then gradually add the sifted flour with the baking powder and mix well with a wooden spoon.
- Either grease the muffin tin or put in muffin paper, they are nicer to me in paper baskets, they remain softer.
- Fill 2/3 of the holes with the mixture and put 3-4 blackberries on top. If you use frozen fruit then drain it from the water first.
- Bake the muffins at 180 C degrees (350F) in a preheated oven for about 20 minutes.
- After baking, after they have cooled for a few minutes, transfer them to a serving plate and sprinkle them with powdered sugar in which you have mixed ground vanilla sugar.
