NO BAKE CHOCO PUDDING JAFFA CAKE

I prepared this cake for Valentine's Day, although I don't celebrate, it somehow became a tradition for me to make a heart shaped cake every year for  St.Trifun and St.Valentine. I'm not a big fan of unbaked pudding cakes, but I did have several packs of instant pudding at home and a bunch of open biscuits, wafers, jaffa cookies and I decided to use them and make a cake. After this cake, I changed my mind about unbaked pudding cakes. The cake was really great, delicious, creamy, and the jaffa cookies further enriched and enhanced the taste.

Ingredients:

  • 2 x 40 g packs of chocolate powder pudding (check the end of the recipe for example)
  • 5 tablespoons sugar
  • 850 ml of milk (3,5 cups)
  • 100 g butter (3.5 oz)
  • 100 g of dark chocolate

  • 150 g of chopped jaffa cakes (5,3 oz)
  • 150 g chopped petit buere biscuits
  • 10 pieces of chopped wafers
  • 50 g crushed chocolate with rice (1.7 oz)
  • other chocolates if desired

Glaze

  • 150 g of chocolate (5.3 oz)
  • 150 ml of milk (1/2 cup)
  • 1 tablespoon starch
  • chocolate whipped cream for decoration

Preparation:

  1. First, the pudding is prepared according to the instructions on the bag, except we use a little less milk than required. Before the pudding is ready, add the chocolate and butter and mix well until they melt. You can also use a mixer. Keep in mind to use non stick pot when preparing pudding since milk can easily burn and destroy everything.
  2. Then, in a deeper bowl, mix the dry ingredients, chopped biscuits, jaffa cakes, wafers and add the hot pudding.

  3.  Mix slowly with a spoon and pour this mixture into the cake tin  about 20 cm diameter (I lined it with baking paper).

  4. Allow to cool and harden nicely in a fridge.
  5. Once cool, make the glaze. Dissolve the starch in 50 ml milk. Slowly melt the chocolate into the remaining milk in a saucepan and then add the dissolved starch. The mixture will start to thicken. When it starts to thicken, immediately pour over the cake. Flatten and allow to cool again.

  6. Decorate as desired with chocolate whipped cream.

  7. It is best to serve it the next day.
