Ideal, perfect, wonderful! I have been planning to try these fritters at home for a long time after I first tried them in a restaurant in Bitola. Normally, they wouldn't share the recipe, I understand that. So since I do have experience with zucchini burgers, it wasn't hard for me to find out a way to prepare fritters too. I always give advantage to baked food, but once in a while I allow fried food in my home, and these fritters are really worth it. And I really think the taste is almost the same as in that restaurant. Well I could've give them a free ad if they gave me the recipe but now no, I won't tell the name of the restaurant :) So, you'll get around 25-30 fritters from this dose.
Ingredients:
- 400 g (14 oz) grated drained zucchini
- 260 g (9 oz) of flour
- 1 egg
- 150 ml (2/3 cup) plain yogurt
- 2 tsp baking powder
- half a teaspoon of salt
- half a teaspoon garlic powder
- oil for frying
- about 70 ml from the zucchini water
Preparation:
- Grate the zucchini first and put them in a kitchen cloth. Squeeze them occasionally, and save some of the water from the squeezing, you will need it later.
- Mix the flour, baking powder, egg and yogurt well and add about 50 ml (about 3.5 tbs) of zucchini water.
Add the grated zucchini and mix well. Add a little more water if the mixture is too thick, but keep in mind that it will dilute a little more after a while because zucchini tends to release water all the time.
- Then heat a larger amount of oil or even better, use a fryer if you have.
- Using a spoon, take from the mixture and slowly put the contents into the heated oil.
- Fry at a moderate temperature until nicely browned on both sides.
- Take out the finished fritters on a kitchen paper. Combine with garlic spread.
