Layer zucchini, cheese and bacon and bake! And get this wonderful lunch, a little different from the one you are used to. It was my first time too and I'm thrilled. This amount is enough for two.
Ingredients:
- one large zucchini cut in strips
- 100 g of yellow cheese cut into strips
- 100 g cubed mozzarella
- 100 g smoked bacon on strips
- a little garlic
- 5-6 tbs tomato puree (if desired)
Preparation:
- Cut the zucchini into thin strips lengthwise. Add salt to the pieces and leave for 30 minutes to release the excess water. Gently squeeze them and wipe off the water.
- Then grease a smaller casserole 22 x15 and arrange 4 pieces of zucchini on the bottom.
- Put yellow cheese and mozzarella and 3 strips of bacon on top. Continue arranging the moussaka in that order.
- Put 2-3 cloves of chopped garlic between. There is no need for salt. If wanted, add 1 tbs of tomato puree at every layer. I didn't add because I didn't have one but I think it will make the taste even better.
- Cover the casserole with foil and bake for 1 hour at maximum temperature.
- After baking, leave to cool for 15 minutes and serve.
- Goes great with lettuce salad.
