This is the best cherry cake recipe! Make your kitchen smell like heaven. A recipe from the cookbook of my grandmother, from her kitchen, where I could smell the best aromas in the world!
Measure with a regular cup (240 ml measuring cup)
Preparation:
Ingredients:
- 4 eggs
- 2 cups of sugar
- 2 sachets vanilla sugar
- 1 cup oil
- 1 cup plain yogurt (or buttermilk)
- 3 cups flour
- 1 sachet baking powder (2 tsp)
- 400 g of sour cherries - frozen
- 1 tbs semolina
- In a deep bowl, mix the eggs with a mixer at max speed by gradually adding the sugar and vanilla until they thicken (about 15 minutes).
- Then add the oil and yogurt, combine.
- Finally, add the previously mixed flour and baking powder. Mix until homogenized.
- This mixture is divided into two parts. Pour the first part into a greased and floured pan (in my case with dimensions 24x34 cm).
- Bake in a preheated oven at 180 C (350 F) degrees for 15 minutes, then spread the cherries mixed with the semolina above this part, put the remaining half of the sponge cake mixture.
- Return to the oven, continue to bake until the cake starts catching color, then reduce temperature to 150 C (290 F) degrees and finish baking until cake is ready - check with a toothpick if the cake is ready.
- Let the baked cake cool down, then cut in pieces and put powdered sugar on top.
