When I think of this dish, I’m reminded of the delicious aroma wafting through the kitchen as my family gathers around the table. It’s simple, hearty, and full of love—just like Macedonian home cooking should be.
This dish isn’t just a meal, it’s a tradition. It reminds me of lazy Sundays and the joy of gathering with loved ones for a hearty, home-cooked feast. Whether it’s a family gathering or a cozy dinner, this recipe always brings smiles to the table.
Ingredients:
- 1 whole chicken (about 1.5 kg)
- 1 kg potatoes, cut into wedges
- 50 ml olive or sunflower oil
- 2 tsp vegetable seasoning (like Vegeta)
- 2 tsp chicken spice mix (if available or any spices you prefer)
- 1 tsp oregano
- ½ tsp black pepper
- 1 tsp garlic powder
- ½ cup water
Instructions:
- Preheat the Oven: Heat your oven to 200°C (390°F).
- Season the Chicken: Rub the chicken with sunflower oil, chicken spice mix, and 1 tsp of vegetable seasoning. Make sure to coat it evenly.
- Prepare the Potatoes: Toss the potato wedges with oil, 1 tsp vegetable seasoning, oregano, black pepper, and garlic powder. Spread them evenly on a baking tray.
- Add Water: Pour ½ cup of water into the tray to keep the potatoes moist and help create a rich, flavorful base.
- Arrange the Chicken: Place the chicken on top of the potatoes, breast side up.
- Roast: Bake for 1.5 hours covered with aluminium foil. Flip the chicken halfway through to ensure even roasting and baste it with its juices. The aroma alone will have everyone asking, “When will it be ready?”
- Serve: Let the chicken rest for 10 minutes before serving. The crispy skin and golden potatoes are best enjoyed with a light salad.
