MACEDONIAN STARTER (APPETIZER)

Macedonian cuisine is known for its rich flavors, fresh ingredients and traditional cooking methods that bring out the best in every dish. One such classic dish that perfectly captures the essence of Macedonian food is grilled peppers with cheese, a staple at any family table or local restaurant.

This simple yet flavorful dish is a favorite at gatherings, especially when paired with rakija.

The beauty of this starter lies in its simplicity, yet it offers an explosion of taste with every bite. To prepare this dish, you will need:

Ingredients:

  • 5-6 green peppers (long, mild ones work best)
  • 2 large tomatoes, sliced
  • 1 cucumber, chopped into thick strips
  • Fresh lettuce leaves
  • 200g of white cheese (sirenje)
  • Olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Steps to prepare:

  1. Grill the peppers over an open flame or in a pan until the skin is charred and blistered. Let them cool slightly, then remove the skin.
  2. Arrange fresh lettuce leaves on a serving platter.
  3. Add the grilled peppers, sliced tomatoes, and cucumber on top.
  4. Place a generous block of sirenje in the center.
  5. Drizzle with olive oil, sprinkle with salt, black pepper, and chopped parsley.
  6. Serve fresh with crusty bread and enjoy!

This dish is best served as an appetizer or side dish alongside grilled meats, traditional stews or simply with warm bread.
